Dr. Saputo,

i recntly tested positive for gliadin and wheat allergies, but not gluten. (Done via a blood test). the test said I tested positive for Candida albicans--high levels.  It also said I was sensitive to lettuce. Can you direct me to someone or a book to help understand my issues and get relief from my allergies.

It sounds like you need a qualified health care practitioner to evaluate your health issues in detail. The specific workup would follow the initial evaluation. There are many ways of assessing suspected allergic issues...before doing more testing it would be wise to know much more about your overall health.
